Key requirements from food authority:

  1. Registration under VO (EC) No. 852/2004 → mandatory with local food authority, even for packed goods.

  2. Hygiene training → certificate from health office, renewed internally yearly.

  3. HACCP plan → documented control of cooling, hygiene, risk points.

  4. Labels (LMIV) → product name, ingredients, best-before date, weight, producer address, allergens.

  5. Hygiene → hot water sinks, fridges ≤ +7 °C, separation of raw/cooked, cleanable surfaces.

Inspection checklist:

  • Daily cooling records

  • Cleaning plan

  • Supplier invoices

Practical notes:

  • Register before selling any food, even homemade honey.

  • Wash hands regularly, provide soap + paper towels.
